Summer Harmony with Japanese Sincerity by Hiroto Ochiai

Hiroto Ochiai was born in Niigata, Japan.

After graduating from university, he joined Enterprise HUGE Co., Ltd., where he learned about cooking and management while being involved in top-notch restaurant hospitality. He then joined Jean George Tokyo, experiencing the diverse cuisine and philosophy of one of the New York’s top restaurants.

In 2017, he moved to the United States. He was involved in the opening of SUSHI AMANE and SHION 68 LEONARD in New York, contributing to both restaurants’ Michelin start achievements as Sous Chef and Beverage Director.

In the summer of 2024, he will relocate to Texas to start his own restaurant project.
